This is episode 3 & in this episode I will show you how we cook Chayote with dried fish at home. You can enjoy it as a side dish with Rice, Beaten Rice or Roti, etc.

Cooking time 20 minutes
Serves 4 as a side dish
Ingredients
500g 1 Chayote
25g dried small Fish
2 ripe Tomatoes
1 medium Onion
4 cloves Garlic
1 tsp Ginger
8 or to your taste fresh Chilies
3 tbsp cooking Oil
1 tsp Salt or to your taste
Spring Coriander to garnish
How to make:
First clean the fish and soak them into hot water around 10 minutes.
Next chop chilies in the middle, mince Garlic & Ginger, slice Onion, chop Spring Coriander and slice Tomatoes, keep them aside.
Peel and Chop the Chayote in half inch strips keep it aside too.
Now drain the water from the Fish and clean it with cold water a couple of times then set it aside.
Next heat a Pan or Kanti in medium heat add in 3 tbsp Oil, after the Oil gets hot add in the fish, stir and fry it around 1 to 2 minutes until it changes the color. Remove it and set aside.
In the same oil add in Minced Garlic, Ginger and Chilies, mix and fry around 20 seconds. After add in sliced Onion stir and cook a minute then follow by Turmeric powder, stir them together and fry until the Onion start to change to brownish color around 2 minutes.
Next add in Chopped Chayote, stir it, add in salt and 1/2 cup water, stir it again then lid on and cook it around 10 minutes medium low heat.
Lid off, stir, add in chopped tomatoes, stir again, lid on again and let it cook until the Tomatoes gets soft around 5 minutes.
Lid off, stir and cook around 2 minutes without lid on then stir again and we are done. Garnish with chopped spring Coriander and enjoy!
