Brás Cod Fish 🐟


Bacalhau à Brás is made from shreds of salted cod fish which is “bacalhau”, olive oil, garlic, onions, bay leaf and thinly chopped fried potatoes in a bound of scrambled eggs. It is usually garnished with black olives and sprinkled with fresh parsley. The name "Brás" is the name of its creator so in English is Brás style Cod fish.

You can use this style with other ingredients, such as vegetables and mushrooms if you are vegetarian. But in this recipe I´m cooking Cod fish in a typical way and turns out so flavorful. Stay tune and subscribe if you enjoy my recipe. Enjoy!

Cooking time 5 to 6 minutes after preparing the ingredients

Serves 2 with Salads of your choices

Ingredients

150g of shreds of unsalted Cod

100g of thinly chopped (matchstick sized) fried Potatoes

3 Eggs (1 whole and 2 only yolk)

½ large white Onion (40g) thinly sliced

1 big cloves of Garlic minced

2 to 3 tbsp of Olive Oil

6 Black Olives

1 to 2 tbsp of parsley finely chopped

1 Bay Leaf

Black Pepper on your taste

Salt if need it after taste

How to make

  1. Prepare all ingredients above (to unsalt and shred the dried salted Cod. Soak in the cold water for two days, changing water every three to 4 hours and dry it then shred the flakes)

  2. Heat a pan on medium high heat and let it to get hot a bit, add 3 tbsp of olive oil.

  3. Before Oil gets very hot add onion, garlic and the bay leaf. Stir it for around 2 minutes or it becomes loose and transparent, to infuse the flavor in the oil. During this stir a couple of times.

  4. 2 minutes passed, add shredded Cod and stir it very well to combine. Now let it cook around 2 to 3 minutes, during this stir it one or 2 times and don't let it burn.

  5. After 2 to 3 minutes it seems all water dried, remove the bay leaf out. Then lower the heat to minimum or turn off and add fried matchstick Potatoes, then straight way add our battered eggs and 2 pinches of chopped parsley for aroma. Stir it well to combine very well. Just takes a minute, it should look all combined and creamy.

  6. Now taste if it needs salt or not then add on your taste and also black pepper and we are done. Now put into a serving plate, add pinch of black pepper and garnish with whole olives and finally parsley a few pinches. By this time the dish looks gorgeous, so creamy and delicious.
