Today I made a mouth watering Nepali style chicken chowmein. It is very economic and comfort food that everyone can enjoy. Yummi!
Serves 3 to 4
Cooking time 10 to 15 minutes (after all ingredients ready)
Ingredients
250g Egg noddle
1 Chicken breast almost 300g slice thinly
Marinate ingredients to chicken
1/4 tsp Chicken Masala
1/4 tsp Cumin powder
1/4 tsp Coriander power
1 and 1/2 tbsp light Soya sauce (1tbsp thick/dark soya sauce)
Sauce
1/2 Cup of chicken stock around 125ml (Veg stock or water can be fine)
2 tbsp Oyster sauce
Fragant Ingredients
3 Cloves of minced garlic
1 tsp minced Ginger 15g to 20g
2 Chilies - optional chopped to strips
1/2 tsp rosted Sesame oil - optional
3 tbsp of Cooking Oil
Vegetables ( you can use other type of veg same quantity)
150g Cabbage sliced in strips
100g Capcicum sliced in strips
80g small long White Mushroom (can be other types), slice thinly
20g Chives choped in 2 inch size (spring onion)
1/2 medium size of Onion sliced thinnly
150g Bok Choy chopped long strips
How to make
Marinate the sliced of chicken with all the marinating spices and keep it aside.
Put the Chicken stock and Oyster souce into a bowl, mix it well and keep it aside.
Boil the 1 and 1/2 liters of water or until it covers the noddles with a bit of salt. Add the noddles and cook them for 4 minutes, drain them and put them in cold water to stop cooking more, drain it again and add a bit of oil to not stick and mix it well, keep it aside.
Turn on the gas to high, add 1tbsp of oil and let it to be hot then add the marinated Chicken and cook it 4 to 5 minutes until it gets golden in colour. Tranfer the meat to plate and keep it aside.
In the same Wok add 2 tbsp of cooking oil then let it to be hot. Add chopped garlic, ginger and chilies and fry it until it start to became golden in colour.
Add all vegetables beside chives and cook until it softens then add noddles and mix it well then add the chicken, and add the souce, mix it well,. Cook it for 2 to 3 minutes then add chives and mix it, cook for 1 minute more or until sauce dries. Turn off the gas. Your delicious Chowmein is done now. Enjoy!
