This simple and satisfying Chicken Fried Rice is a very addictive dish, it is my favorite weekday lunch. I cooked with very little ingredients with a touch of Mixed Pickle which gives it a distinctive flavor to the dish and makes you keep on eating.

Serves 3 to 4
Ingredients
3 full cups cooked cold and loose Basmati Rice
300g Chicken breast in small cubes
2 cloves of Garlic Chopped
1 medium white Onion Chopped in cubes
1.5 cups mixed veggies chopped in small cubes (Cabbage, Carrot, Red & Green peppers)
3 tbsps Mixed Pickles store bought
4 tbsps Soy Sauce
3 tbsps vegetable Oil
0.5 tsp Black Pepper
0.5 tsp Salt or to your taste
Randomly chopped spring coriander
How to make:
Heat Oil in a large pan over a medium heat. Add in the Chicken Cubes. Now with a spatula, make sure that all the cubes get separated and have touched the bottom of the Pan. Let it cook for 3 minutes, meanwhile add in ½ tsp of salt and ½ tsp of Black pepper.
After 3 minutes, flip the meat over and let it cook for 2 minutes on the other side. After 2 minutes, mix it all together nicely and cook it for another 2 minutes until the meat absorbs the salt and pepper evenly and the meat turns to amazing color.
Now, keep the meat on the side of the Pan to separate the Oil from it. In that oil, put in the chopped Garlic, stir it 30 seconds just to release the flavor. Next the Onion cubes, stir it well and bring the meat over on the Onion, like you are covering it. Now, cook it for 2 minutes to release the sweetness of the Onion. After 2 minutes, combine it all well. Now, add in the vegetables of your choice, 1.5 cups. Give a good mix and cook for 30 seconds.
Give a little mix and add in the Mixed pickle about 3 tbsps, you can use according to your taste. Combine it evenly. Now add in cooked and cold Basmati Rice, 3 full cups along with Soy sauce. Combine it very well until the pickles have coated the Rice evenly. Let it fry for 2 minutes so the rice heats properly. After the Rice fried properly, taste to check if any seasoning is missing. Finally add in randomly chopped spring Coriander for the freshness. Mix it very well and done.
