Cooking time 20 to 25 minutes
Serves 2
Ingredients
2 big size Russet Potatoes white yellowish type around 600g peeled, keep it in cold water to not to change the color
1 teaspoon of Sugar
1 teaspoon of Salt
1/3 teaspoon of Baking soda, it will break down the starch on the surface of the potato causing an even crispier crust and deeper color when we fry
1 and half liter of Water, add salt sugar and baking soda into it. This three ingredients help to keep the flavor from the Potatoes when we are boiling
3 tablespoon of Corn Starch
1/2 teaspoon of Black Pepper
Salt and Pepper to your taste to sprinkle on the fried Potatoes
Enough oil to fry almost 700ml
How to make it
Bring the pot to the gas, turn the gas on in high heat then bring up to boil while we are waiting.
Chop the potatoes, chop it in 1 and half inch cubes or pick a size and stick with it to cook evenly.
You can keep it in cold water until you ready.
After water is boiling, drain the water from the potatoes then add them into it.
This takes around 3 to 4 minutes to start boiling then after boiling cook it for 5 to 6 minutes. They shouldn't be falling apart like for mashed potato, we take out just before they are done almost 85% cooked.
After 5 minutes passed, pull them out on kitchen towel to soak all water. Then after water is soaked take the kitchen towel out then let air cool them down, you can use flat plate or rack if you like.
Let it cool completely then they turns out very crispy when we fry.
While we are waiting, make the mix of corn starch and black pepper to coat those potatoes.
After potatoes get completely cold down coat them with the mix by tossing it in the bowl, do not touch it by your hand, they possibly break.
Next turn on the gas in high heat then add oil into a frying pan or pot, let get hot.
Check the oil like this drop the small piece of potato into the hot oil if it fries like this moving around then, it is ready to fry.
Next add potatoes, oil is hot so add them carefully like that. Fry it for 4 to 6 minutes meanwhile keep move it once or twice lightly to flip it up and not to stick each other, Frying time depends always on the size of the potatoes.
After 5 minutes passed, take them out but we are still not yet done we do second fry, it makes crisper and stays crisper and crunchy for some time more.
Let oil to be hotter than before, than ready for the second fry. By the way Potatoes just have to wait 1 to two minutes for the second fry.
Dump all potatoes into hot oil then fry it 2 to 3 minutes. Keep flipping it over otherwise it can burn easily. What we want is a golden brown color. After this time our potatoes are ready turn the gas off than take them out on the paper towel to remove the access oil. Add a pinch of salt and pepper while it’s hot then shake it to coat well.
Now we are done, you can serve with sweet chili sauce and tomato ketchup, also you can eat with sweet, sour and spicy mayonnaise sauce. Bon appetit and enjoy
