Dried Pickled Meat / Sukuti


Let’s make this Wonderful typical Nepalese dish to cheer you up. It has sour, spicy, garlicky and slightly sweet caramelized umami flavor. It’s very easy dish with only a few ingredients. Cooking time 35 minutes after soaking the dried meat.

Serve 4 as a side dish

Ingredients

300 grams dried Meat

A bunch of Garlic leaves

½ red Onion

1 ½ inch Ginger

5 cloves Garlic

2 medium sized Tomatoes

1 tbsp Salt or to your taste

100 ml Oil

1/3 cup Chili Flakes

½ tsp Fenugreek seeds

½ tsp Turmeric powder

Half Lime juices

How to make:

  1. Soak the dried meat in hot water until it gets soft about an hour or more.

  2. Garlic leaves, chop into an inch long, thinly slice onion, Ginger and garlic.

  3. Next roast the tomatoes, peel the skin off and pestle it to make the fine sauce, set aside.

  4. Soaked Sukiti, if it is soft enough then chop it up into an inch pieces and fry it until it gets the slightly crispy on medium heat and set aside.

  5. Now fry the garlic, ginger and chili flakes with a bit of salt on medium low heat until the aroma you smell, set aside.

  6. Into a mortar put the fried dried meat and garlic leaves, crush them randomly with pestle then transfer into a large bowl.

  7. Next by using same mortar and pestle, make the paste of fried Garlic, Ginger and Chili flakes and add it in into the bowl which is already had crushed meat, add in Tomatoes sauce and Onion sliced.

  8. Heat a little pan, add in oil, after the oil gets hot add in fenugreek seeds, fry it until it gets dark. Turn off the heat, add in turmeric powder and mix well then pour them onto the prepared meat and spices. Add in salt a few pinches and combine them very well. After finally put a half lime juice, again mix it very well and we are done.

We can eat as a snack with beaten rice, drinks or side dish for the main meals. Enjoy.
