Stir Fried Seabass with Vegetables


The dish has so much to tell. I fillet and cut a big Sea Bass in one and half inch’s pieces and deep fried them until the lovely golden-brown color appears. Then I soaked it in a pan full of lovely and hot vegetables and chilies sauce. This dish has a vibrant flavor because of the spices and the vegetables I choose. It is so delicious that you cannot stop eating. Please check the video until the end to find out how. Happy cooking!

Serves 4

Ingredients

1.2kg whole Fish Sea Bass

To marinate & fry the fish

3 tbsp Lemon Juice

1/2 tsp Black Pepper

1 tsp Salt

3 tbsp Olive Oil

1/3 cup White Wine

400ml Peanut Oil

To make vegetable Sauce

3 stems of Celery, chopped in 1-inch strips

½ red Pepper cut in ½ inch cubes

½ yellow Pepper cut in ½ inch cubes

1 red Onion cut in ½ inch cubes

1 Tomato sliced in wedges

10 cloves of Garlic minced

1-inch Ginger minced

3 tbsp Peanut Oil

2 Bay leaves

10 grams whole dried red chilies (optional if you don´t have)

1 tbsp Coriander Powder

1 tsp Garam Masala

1/2 tsp Turmeric Powder

1/2 tsp Chili Power

A few pinches Black Pepper

1 tsp Aromatic Chili Oil

1 full tbsp Corn starch diluted with 5 to 6 tbsp of water

1 tsp Salt or to your taste

Enough water hot or cold

Bunch of Coriander

How to Make:

Prepare all the ingredients above accordingly.

  1. First with sharp knife fillet and chop the fish in your desire pieces, place it into large bowl, marinate with 3 tbsp Lemon Juice, 1/2 tsp Black Pepper, 1 tsp Salt, 3 tbsp Olive Oil and 1/3 cup White Wine, cover and let it marinate for at least 15 minutes.

  2. After fry the fish until it gets golden in both sides on medium or medium high heat for around 3 to 4 minutes both sides in total, place in dry pot or plate and set aside.

  3. While the fish is frying, start making the Sauce. Fry the minced Garlic and Ginger and Bay leaves in 3 tbsp of Peanut oil until they become light golden then add in whole red chilies and fry for 30 seconds then follow with Coriander powder, Garam Masala, Turmeric powder, Chili Power and mix them very well around a few seconds.

  4. Now put in all the chopped vegetables, stir, cook 2 minutes then add in Chili Oil and a few pinches of black Pepper, combine them very well.

  5. Next add in the diluted Corn Starch with water, stir and add in salt to your taste, mix for a few seconds.

  6. Now put in hot Water, around 2 to 3 cups, mix, and let it boil for around 3 to 4 minutes on high heat then we are done.

  7. Finally place the half of the sauce into a large bowl, add on fried fish, pour the rest of the sauce on top and let it rest around 10 minutes which helps to make the fish juicy.

By the way don´t forget to garnish with the bunch of Spring Coriander and enjoy with rice, Roti or Noodles.
