Serving: Serves 4 as a side dish or 2 as a light main
Ingredients:
Cauliflower: 1 kg, cut into bite-sized florets
Olive Oil: 2 tbsp
Cumin Seeds: 1 tsp
Garlic: 6 cloves, roughly chopped
Paprika: 1 tsp (or mild chili powder, to taste)
Salt: To taste
Coriander (Cilantro): A handful, chopped
Instructions:
Prepare the Cauliflower:
Cut the cauliflower into bite-sized florets. Rinse well and steam for 6-8 minutes until tender but firm.
Prep the Aromatics:
Roughly chop the garlic and coriander while the cauliflower is steaming.
Stir Fry the Cauliflower:
Heat olive oil in a pan or karai on medium heat. Add cumin seeds and let them splutter.
Stir in the garlic and sauté until golden.
Add paprika (or chili powder) and mix briefly.
Add the steamed cauliflower and salt. Toss gently to coat with the spices and sauté for 2-3 minutes.
Finish with Coriander:
Sprinkle chopped coriander, toss to combine, and serve warm.
