Ingredients
400g rolled oats
1 cup honey (about 300ml)
2 tbsp coconut oil
1 tsp table salt
1/2 tbsp vanilla extract
1 tsp cinnamon powder
30g chia seeds
40g linseeds
50g pumpkin seeds
50g sunflower seeds
80g whole almonds
60g walnuts (roughly chopped)
40g almond flakes
70g yellow & brown raisins
50g goji berries
In a small saucepan, combine coconut oil, honey, salt, and vanilla extract. Stir well over low heat until everything is melted and combined. Once the mixture starts to boil, remove from heat and set aside.
In a large mixing bowl, add rolled oats, chopped walnuts, almonds, almond flakes, sunflower seeds, linseeds, pumpkin seeds, chia seeds, and cinnamon powder. Stir well to evenly distribute the ingredients.
Pour the warm honey glaze over the dry mixture and stir thoroughly, making sure all the ingredients are coated evenly.
Preheat your oven to 160°C (320°F).
Line a large baking tray with parchment paper and spread the granola mixture in an even layer.
Bake for 10 minutes, then remove from the oven and stir the mixture to ensure even toasting.
Return to the oven for another 7–8 minutes, stir again, and bake for a final 7–8 minutes until golden brown.
Remove from the oven and let it cool completely—this is when it becomes crunchy!
Once the granola has cooled, crumble it if it is stuck together. Mix in the almond flakes, goji berries, and raisins (Almond flakes can be substituted with coconut flakes if preferred). Stir to combine.
Transfer the granola to an airtight container and store it in your pantry. It won’t last long—it’s that good! Enjoy it with yogurt, fresh fruit, or milk for breakfast, or grab a handful for a crunchy snack.
