This dish is perfect as a snack paired with puffed rice or as a comforting side for chilly days. Packed with protein, it’s a heartwarming bowl that brings the essence of the mountains straight to your kitchen.

Cooking Time: 25 minutes
Serves: 4
Ingredients:
600g fresh, ripe whole Borlotti beans (Cranberry beans)
½ tsp turmeric powder
Salt, to taste
Half an onion, finely chopped
A few colorful fresh chilies, finely sliced
A handful of spring coriander, finely chopped
Mustard oil (optional, for garnish)
Instructions:
Prepare the Beans:
Remove the seeds from the fresh bean pods. Rinse the beans thoroughly in a bowl of water.
Cook the Beans:
Place the rinsed beans in a pressure cooker.
Add 1 teaspoon of salt, ½ teaspoon of turmeric powder, and 4 to 5 cups of hot water.
Stir to combine. Cover the pressure cooker with its lid and set the heat to high.
Pressure Cooking:
Cook on high heat for 10 minutes. Then, reduce the heat to medium-low and let it cook for an additional 15 minutes until the beans are tender and soft but still hold their shape.
Prep the Garnishes:
While the beans are cooking, finely chop the onion, slice the fresh chilies, and chop the coriander.
Set these aside for later use.
Release Pressure & Reduce Liquid:
Once the cooking time is up, remove the pressure cooker from the heat and let it release pressure naturally.
After the pressure has fully released, open the lid to reveal beautifully cooked beans.
If the beans have too much liquid, return the pressure cooker to the stovetop and let it simmer until the liquid reduces slightly.
Assemble the Bowl:
Transfer a portion of the cooked beans into a bowl.
Add the freshly chopped onion, chilies, coriander, and a drizzle of mustard oil (optional).
Mix well to combine all the flavors.
Serve & Enjoy:
Serve the seasoned beans as is or with a handful of puffed rice or beaten rice for an authentic mountain-style snack.
