Pataniscas de bacalhau | Cod Fritters



Today I’m going to make Cod fritters. Pataniscas de Bacalhau, it's a Portuguese inspired dish which is one of my favorites here in Portugal. And I often make it, after making it several times. I came up with this amazing recipe. It is quite easy to make and comes out amazing looking and delicious. Please watch this video until the end and try it out. Enjoy!



Serves 5 to 6


Ingredients

500g desalted and shredded Cod

1 cup of milk to marinate the cod

150g all Purpose flour

¼ tsp Baking powder

2 Eggs

150ml gas Water

1 medium Onion, chopped finely

½ yellow Pepper, chopped finely

A handful Parsley chopped

10 to 12 Cherry tomatoes, chopped in half

A Half lemon juice (about 1.5 tbsp)

Salt to taste

Black pepper to taste

Vegetable Oil to fry


How to make:

Prepare all the ingredients mentioned above


  1. Put the shredded cod into a bowl then add 1 cup of milk. Combine very well to make sure the milk submerses all the cod. Then put a lid on and keep it aside to marinate for at least 30 minutes.

  2. While the Cod fish is marianting. In a large bowl, put in150 grams of all purpose flour. A bit less than 1⁄4 tsp of baking powder and set aside.

  3. Chopped onion, Half yellow pepper, cherry tomatoes, chopped handful of parsley, and 2 eggs, separate the yolks and put them in the bowl. The white, keep it aside in a separate bowl.

  4. After 30 minutes, mix the marinated cod with a spoon and drain the excess milk very well and put it into the bowl and half lemon juice. Add salt to taste and freshly cracked black pepper, combine all together very well. Next, add gas water/sparkling water, a little at a time and mix until it forms a thick batter and keep it aside.

  5. Beat the egg white until it forms a peak and join it all in the bowl and combine gently and smoothly clockwise until it becomes a smooth batter.

  6. On a high heat, heat a large pan with plenty of vegetable oil. While the oil is heating, make ready a plate or a tray with a paper towel, to put on the fritters after frying.

  7. Give a little stir to the oil to heat up evenly if needed. If the oil is very hot, reduce the heat to a little above to medium heat.

  8. Take a ladle, stir gently the batter to make sure a bit of everything comes in the ladle, take a ladleful of batter. Put in the oil. Don’t over crowd. Place it in a gentle way and let them fry until the bottom part is firm and it turns to a gorgeous golden color.

  9. Turn them over and fry it, turning a couple of times, until it cooks inside thoroughly over medium heat.. Cook it slowly. It takes 5 to 6 minutes for a batch to cook. Place on a paper towel when it's done. Repeat the same process for the rest of the fritters .

You can enjoy this as an appetizer or as a side. Please make it yourself, it's fun and you just have to follow the steps. Enjoy!
