In this cold winter to keep you warm this Pork Loin and lovely vegetables stew is going to be a great idea to make. I use lovely loin and beautiful fruity veggies as well as hearty warm spices from my hometown to make it juicy and increase appetite. Very easy to make, you can eat by itself or with rice or bread. Try it once you won’t regret it!
Cooking and preparation time 1 hour
Serves 4
Ingredients
700g Pork Loin (Chopped in your way)
200g small whole Onion
90g chopped Potatoes
70g chopped Carrot
150g Cherry Tomatoes
2 chopped Green Chilies
0.5 cup finely chopped Onion
1 tsp Ginger paste
1 tbsp Garlic paste
2 tbsp Tomato Paste
5 tbsp Olive Oil in total
1 tsp Cumin powder
1 tsp Paprika for the colour
1.5 tsp Coriander powder
0.5 tspTurmeric powder
1 tbsp Cornstarch
0.5 tsp Black pepper
0.5 tsp Chili powder or to your taste
3.5 cups hot water
1.5 tsp Salt or to your taste
2 tbsp Spring Coriander
0.5 tbsp Lemon juice for final seasoning
To marinate the Pork Loin
1 tsp Black pepper
1 tsp Salt
1 tsp Paprika
0.5 tsp Baking powder
1 tbsp Lemon juice
To fry Potatoes
1.5 tbsp Cornstarch
0.5 tsp Baking powder
1 cup frying Oil
How to make:
Prepare all the ingredients above:
First marinate the Pork Loin with 1 tsp Black pepper, 1 tsp Salt,1 tsp Paprika, 0.5 tsp Baking powder and 1 tbsp Lemon juice. Mix them very well and keep it to marinate for 30 minutes.
Next coat the Potato chunks very well with 1.5 tbsp Cornstarch and 0.5 tsp Baking powder. On medium heat fry them 10 to 12 minutes until all through cooks and set aside.
After 30 minutes, seal the marinated Loin with a tbsp of Oil on high heat a few minutes until it looks lovely caramelized colour on both sides as well as the small Onion, Carrot, Cherry tomatoes and Green chilies, keep it a side.
Into the same pan add in 2 tbsp Olive oil, finely chopped Onion, mix well and add in the Garlic and ginger paste, combine them well and cook until it becomes loosen and slightly changes the colour, keep heat on medium.
Next add in Tomato paste, stir and combine and cook it a minute.
Now add in the sealed Pork Loin, small Onion, Carrot and fried Potatoes, stir them very well to combine.
Next add in the masalas - Cumin powder, Paprika, Coriander powder, Turmeric powder, Cornstarch, Black pepper, Chili powder and Salt, mix it well so that all the masala is going to coat evenly and cook for a minute.
Add in 3.5 cups of hot Water or vegetable or meat stock broth, ladle it a bit and let it boil lid on and cook for 30 minutes on low heat.
After 30 minutes you will see the sauce has reduced, thicken and the meat and vegetables have cooked well and turn heat up to medium.
Add in Cherry Tomatoes, Chilies and chopped spring Coriander, combine them well in the sauce.
Finally session with Lemon Juice if you need it salt, combine lightly and finish.
Note: I use Iron pot, you can use the available one. This recipe is adjustable so you can choose the meat that you prefer and vegetables and if you like use stock broth instead of hot Water.
This dish you can eat like one bowl meal or can enjoy with Rice, Bread, Roti etc.
