Today I’m making Potato and Cauliflower. I’m cooking in Coconut Oil to enhance the flavor. It's an easy and healthy weekday vegan dish that you can eat with hot steam rice and dal, Pickles or warm roties. It's gonna be incredible!

Ingredients
600 grams Potatoes
500 grams Cauliflower
3 small medium Tomatoes
3 small Onions
1 Inch Ginger
3 cloves Garlic
3 tbsp ready made tomato Sauce
1 tsp Cumin Seeds
3 tbsp Coconut Oil
0.5 tsp Turmeric powder
1.5 tsp Salt
1.5 tsp Coriander Powder
1 tsp Chili Powder
0.5 tsp Garam masala
Hand full of chopped spring Coriander
How to make:
Chop the clean Potatoes with skin on, roughly into half inch cubes. Cauliflower, chop it up to a similar size like the Potatoes. Onions and Tomatoes, chop them up roughly into small cubes. Ginger and Garlic, make a paste, adding a tbsp of water. Finally, roughly chop, hand full of spring Coriander.
To cook, add in about 3 tbsps of coconut oil to the pan. Let it melt on low heat. After it melts, add in Cumin seeds, infuse it for 20 seconds. Add in the chopped Onion, stir and cook it for 6 to 7 minutes on medium low flame until it changes the color to slightly golden. Add in garlic and ginger paste and store bought tomato sauce. Stir and cook it for 1 minute.
Chopped Potatoes, put them all in. Combine very well. Add in ⅓ cup of water and 1 tsp of Salt. Give it a mix again. Reduce the heat to low. Cover it up and cook it for about 15 minutes until the Potatoes are almost cooked.
Lid off and give it a good mix. Now put in all the chopped Cauliflower, give it a nice mix and add in Turmeric powder, Coriander powder, Chili powder and Salt, a few pinches. Give it a good mix for 30 seconds then add in the chopped tomatoes, giving it a very good mix. Now put in ⅓ cup of water and give it a light mix again. Cover it up and cook it for 10 to 12 minutes on low heat.
After 12 minutes of cooking it looks juicy, soft and smells so good. By this time the potatoes and the Cauliflower are cooked very well. Finally, sprinkle half tsp of garam masala and the handful of chopped spring Coriander. Give it a really good mix and the dish is ready. It's a joy to eat this amazing dish with hot steam rice, dal, Pickles or warm roties. It’s amazing, enjoy!
