Juicy and most flavorful Shrimp Rice you will ever taste. Really quick and easy to make, you only need to follow the steps that I’ll show you. Make it and enjoy!
Cooking time 20 minutes
Serves 2 for full meal or serves 4 as a side dish
Ingredients
To seal the Shrimp
350 grams devein and peeled Shrimps
A few pinches Salt to sprinkle
Black pepper to taste
1 tbsp Lemon Juice
1 tsp Olive Oil
For the Rice
1 (200grams) cup Rice
1/2 cup Onion diced
2 tbsp garlic minced
1 dried Chili
2 tbsp Olive Oil
1/4 cup Tomatoes sauce
1/3 cup White Wine
Salt to taste
1 tbsp spring Coriander/Cilantro Leaves
How to make
First prepare all the ingredients above:
Marinate the Shrimp with lemon juice, black Pepper to your taste and a few pinches of Sea Salt both side and let it marinate for at least 10 minutes if you want to marinate for more time cover it and keep it in the refrigerator.
Once 10 minutes passed, seal it both sides 2 to 3 minutes, in medium high heat with 1 tsp Olive Oil. When you see their beautiful color, take them all out and keep it aside.
Next, to make the Rice you can use the same pan. The heat is still on medium high. Add in 2 tbsp olive oil, ½ cup diced onion, 2 tbsp minced garlic and 1 dried chili break and add in. Mix and stir them very well. Now cook it until they are transparent and loosen for around 2 minutes.
After it looks perfect, lets add in 1 cup of Rice, 200 grams, already wash. I use Caroline rice, it has a strong capacity to absorb the flavor, aroma and color of the ingredients that is cooked with it, stays juicy and makes a creamy sauce. Basically, you can use to cook this rice with other ingredients that you desire, it doesn’t break and stays creamy. Otherwise you can use short grain rice.
Stir it very well and let it fry for 1 minute. After one minute when all water dried, add in 1/3 cup white wine, it adds flavor but if you are cooking it for your little kids than you can escape it. Mix it very well to combine and let the alcohol evaporate around 1 minute.
After 1 minute when you see all the alcohol evaporated, add in ¼ cup of tomato sauce and a few pinches of salt. Let’s combine them very well and let it cook for another minute to have the delicious flavor from the tomato sauce.
After a minute mix it. Now add the shrimp Stock that I made in my last video. The ratio I use is 1 cup of Stock equal ½ cup of plain water to balance the flavor if you like milder shrimp flavor than use 1 cup of stock equal one cup of water. I use 2 cups of Stock and 1 cup water in total 3 cups of liquid for one cup rice to make it juicy and creamy. Instead of Shrimp stock you can use vegetable stock.
Combine it very well and let it boil, if you want, turn the heat up to high until it boils, it depends.
After its starts boiling, mix it quickly, cover it and lower the heat to medium low and let it cook 8 minutes.
8 minutes passed, let’s see, looks good and juicy, mix it and add in the shrimp, keep 3 shrimps to garnish if you like! Combine them very well, add coriander leaves. Mix it. By this time, it looks delicious, juicy, the rice cooked for perfection with an amazing aroma. If you want, you can taste and adjust salt to your taste now. Turn off the gas and our shrimp rice is done. Transfer to a plate. Garnishing with those 3 Shrimps that we kept and sprinkle a little bit of coriander leaves, looks so beautiful. Enjoy!
