Preparation and cooking time: 30 minutes.

Serves 3 to 4

Ingredients

150 grams of Soy Chunks

5 to 6 spring Garlic

6 tbsp of Mustard oil

5 to 6 dried chilies

1 tsp Turmeric powder

1/2 tsp Roasted Cumin powder

Red Chili powder to taste

1 tsp freshly blended Garlic paste

1 tsp Ginger paste

1/2 tsp Fenugreek seeds

1/2 Lime juice

How to make:

  1. First, begin with soaking Soy chunks. 150 grams of Soy Chunks are put into a bowl. Add in enough boiling hot water until it covers. You’ll see it's floating, press it down to immerse in water and let it soak for 5 to 10 minutes.

  2. Meanwhile, I’m preparing the spring Garlic. Chop it up into 1 inch lengthwise.

  3. Soy chunks are softened. Put them in a colander and wash it very well, squeezing to remove the strong taste. After washing them, squeeze it very well to remove the excess water so it absorbs the spices. Put it in a bowl.

  4. Heat a pan on medium heat. Add about 2 tbsp of Mustard oil. Chop up 5 to 6 dried chilies. Fry it for a few seconds then remove and set aside. Now, the Soy chunks go in the pan. 1/2 tsp Turmeric powder for the color and the flavor, here add in a few pinches of salt too if you like

  5. Combine it all well and fry the Soya chunks for 3 to 4 minutes. Or until it gets caramelized color evenly. As you  can see, it's done. Transfer it to a deep, large bowl to make Choila. Now, put 1/2 tsp Roasted Cumin powder, Red Chili powder to taste. 1 tsp freshly blended Garlic paste and 1 tsp Ginger paste.

  6. It’s time to make Oil seasoning. Heat a little pan and add a generous amount of Mustard oil about 4 tbsp, 1/2 tsp Fenugreek seeds, fry it in the oil until it's dark. Now, remove from the heat and add in 1/2 tsp of Turmeric powder. Combine it well. Pour it all on the spices with the Soy chunks in the bowl. Put earlier fried chilies, Chopped spring Garlic, 1/2 Lime juice and Salt to taste. Now, with your cleaned hand, combine it very well. After, combine it very well, taste and adjust the seasoning then your delicious “Soy chunks Choila” is ready!
