This is a typical Pickle dish from Nepal. It is savory, tangy, sour, spicy and fragrant pickle salad dish. It seems like salad but in Nepal we say Pickle (Achar). This is such an easy Pickle dish which hardly takes times to prepare. It’s a delicious side dish we eat with our snack or main meal. I hope you give it a try. Enjoy....

Serves 4
Ingredients
200gr or 3 medium size of Russet boiled & peeled Potatoes
200gr Cucumber
100gr Cherry Tomatoes
50gr Green Peas
½ Onion
50gr white Sesame seeds
2 fresh Chilies
2 Garlic Cloves
1 inch Ginger piece
1/4 tsp of Fenugreek seeds
1/4 tsp of Turmeric Powder
1/4 tsp of Coriander Powder
1/4 tsp of Red Chili powder
2 tbsp of Spring Coriander
2 to 3 tbsp of vegetable Oil
1 tsp or to your taste table Salt
2 tbsp of Lemon Juice
How to make
Prepare all the ingredients above
Heat a little pan on medium flame. After the pan becomes hot, add 50 gr of Sesame seeds, toss it until it becomes brown evenly, and use chopsticks or spoon.
Next put it into a Mortar, with a pastel crush it until it becomes powder but it doesn't have to be very fine. Keep aside.
Now start preparing the rest of the ingredients, basically chopping and adding into a large salad bowl. Chop the boiled and peeled potatoes in an inch cubes, I boiled them 15 minutes in normal pot. Add in the center of the bowl that you prepared to make the Salad.
Chop cucumber, first lengthwise and take off the flesh and chop into an inch cubes. Add into the bowl on the side of the potatoes.
Cherry tomatoes, chop it into half or 4 pieces if they are big. You can use normal tomatoes instead. Add it with others.
Chop the onion an inch in cubes too, separate them and add.
Add green peas I use frozen, you can use it fresh too if you have it.
Chop Spring Coriander and add.
Add the crush sesame powder that we made earlier.
Now our fragrant ingredients. Chop Ginger in little strips… and garlic, then chilies and add them on the potatoes.
Next add a quarter tsp of Coriander powder
A quarter tsp of red chili powder, remember we added fresh chili too so add it to your taste and the salt to your taste, I add it 1 tsp.
Remember to put all fragrant ingredients together so when we put the hot oil on top of them to season, it will cook it than enhances its fragrance and flavor more.
Now heat a pan in medium flame. Add 2 to 3 tbsp of vegetable oil that you prefer.
After the oil gets hot add a quarter tsp of fenugreek seeds. Let it become dark brown after turn off the heat, add Turmeric powder, shake the pan a bit.
Now pour it into the bowl on top of the fragrant ingredients which helps to enhance the flavor.
Mix it all well with spoons because it can be hot. After you mix it add 2 tbsp of lemon juice or more if you like more citric.
Now with your clean hand mix it all well properly, break some potatoes to make it creamier if you like. If you don´t want to use your bare hand than use gloves or just spoons. Mix them very well. By this time it looks amazing and the smells so good and we are done.
