When you have a lot of Eggs, create this delicious appetizer for you, for your family and friends. This spicy, savory, tangy and crunchy Eggs appetizer with a Nepalese touch will make you addicted, try it, it's so easy to make without hassles.
Cooking time 20 minutes
Serves 4 as an appetizer
Ingredients
To boil the Eggs
4 Eggs
1 tsp Sea Salt
Water until it covers the Eggs
For the Stuffing
1 small Red Onion
1 medium ripe Tomato
1 Red Chili or to your taste
1/3 cup Spring Onion
2 tbsp Spring Coriander
2 tbsp lemon Juice or half Lemon
1 large clove of Garlic
Small sliced of Ginger
½ tsp Roasted Cumin powder
1/3 tsp Turmeric powder
3 tbsp Oil
Fenugreek Seeds
½ tsp fine Salt
For the Texture
20 grams of Peanuts
How to make
First boil the Eggs with Sea Salt for 10 minutes (hard boiled) on medium high heat. After the Eggs cook hard, take them out and let it cool down. Peel the Eggs, cut the both ends off and cut it in the middle, put it on the serving plate with end part on the surface of the serving plate, set aside.
To make the Stuffing slice the Red Onion and the Tomato (don´t use juice and seeds) thinly lengthwise, chop Red Chili & spring Onion lengthwise too, spring Coriander randomly, Garlic & Ginger into small strips then put them into a bowl, add Cumin powder and fine salt to your taste and set aside.
Heat a little Pan on medium high heat and add into Oil. As soon as the Oil is hot put in Fenugreek seeds and let it infuse until they get a darker color. After turn off the heat, add in Turmeric powder, combine it very well and pour it all into the bowl that has chopped ingredients. Mix it very well, divide into half and put it into another bowl.
Next add the yolks from 2 Eggs into the bowl that has the half of the stuffing then combine it very well.
After both stuffings are ready put the them on the chopped Eggs, one with yolk on 4 half's and the other in another 4 half's.
Finally, to give the crunchiness, dry roast peanuts, chop randomly and put on top of the stuffing
