Very typical snack dish from Nepal which is normally eaten with drinks. In this video I use the Sukuti that I made for myself and went so well. I cook Sukuti with Turmeric, Chili, roasted Cumin and Coriander powder as well as onion, fresh Chilies and Tomato to make juicy and more delicious. Make it like this, you will love it. Cooking time around 30 minutes after soaking and preparing the ingredients.
Serve 4 as a snack
Ingredients
300g Mutton Sukuti
4 tbsp vegetable oil
1 medium Onion
1 medium Tomato
1 green Chili
2 red Chili
2 tbsp randomly chopped spring Coriander
1/3 Turmeric Powder
½ tsp red Chili Powder
1 tsp Roasted Cumin powder
½ tsp Roasted Coriander powder
1 tsp Salt or to your taste
To infuse in the Oil in the beginning
A few cloves
Green cardamom
1 Star Anis
A small piece of Nutmeg shell
Cinnamon Stick
How to make:
Prepare all the ingredients above
First soak the Sukuti in the hot water. And while Sukuti is soaking chop the vegetables that you are going to cook with. I use Onion, Tomato and chilies.
After Sukuti is soaked, after an hour, or if you don’t have time then soak it less time, it will be ready. Remove from the water and chop it into bite size pieces, set a side.
Heat a pan on medium heat and put in the Oil and whole spices at the same time then let it infuse slowly until the whole spices become brown, remove them from the oil.
Next put in chopped Sukuti, fry it until it gets the light brown then add in Turmeric powder, red Chili powder, roasted Cumin powder, Ginger paste, Garlic paste and Salt, combine them very well around 30 seconds then put water, let it boil, turn heat medium to low, lid on and cook it until the water dries around 20 minutes.
After 20 minutes, stir and put in chopped Onion and Chilies, stir and cook around a minute, then add in the tomato, stir again and sprinkle roasted coriander powder and spring chopped coriander then combine them very well and ready to be serve. Enjoy….
