Stir fried Black Eye Beans Recipe


I’m making Black eyed beans in Nepalese style. These highly nutritious beans are eaten all over Nepal in many ways. I like them especially as a snack. It's delicious, and easy to turn into a number of recipes and make as part of a healthy diet. Today I’m making one typical Nepalese way with our simple spices. It will be easy and so good that you will love it.


Serves 4

Cooking time 6 minutes for boiled beans


Ingredients

2 cups of boiled beans

2 tbsps Mustard Oil

¼ tsp Turmeric powder

0.5 tsp Cumin powder

1 medium red Onion

0.5 tsp Chili flakes

¼ tsp Salt

How to make:

Prepare all the ingredients above:

  1. Soak the beans in cold water overnight or at least for 2 to 3 hours and boil them with Turmeric powder and salt until tender for 30 minutes. Or use canned beans from the supermarket.

  2. Heat a pan over a medium flame, add in Mustard Oil, let it heat it.

  3. Add in the chopped Onion. Stir and cook for two minutes, only to soften it and add in turmeric powder, Cumin powder and Chili flakes, Chili flakes use per your taste. Stir for 20 seconds to enhance its flavor.

  4. Now put in 2 cups of boiled beans. Stir and sprinkle a few pinches of Salt. When we boil it, we use salt so use it as per your taste. Stir it again and let it fry until all the sauce dries, it takes about 2 to 3 minutes over a medium flame.

  5. After all the sauce has dried, stir it well again and the beans are ready. Transfer to a plate and enjoy as a side dish!
