Serve 2
Cooking time 40 minutes
Ingredients
350g Meatball
2.5tbsps Olive Oil
1 medium Onion finely chopped
2tbsps green Coriander
1 medium Tomato
2 cloves of Garlic
0.5 inch Ginger
0.5 tsp Cumin seeds
2 Bay leaves
1 Star Anise
Small Cinnamon stick
¼ tsp Turmeric Powder
0.5 tsp Paprika
0.5 tsp Coriander Powder
0.5 Garam Masala
0.5 tsp Cumin Powder
1.5tbsps Tomato sauce
0.5 tsp Salt
1.5 cup water
How to make:
Prepare the ingredients above.
First start with applying some Oil in the tray. After it's done, place Meatballs in. And brush some oil onto them. As we finished applying the Oil, put it in the Oven to roast for 15 to 20 minutes until the meatballs get a nice color at 230C.
While the meatballs are roasting, chop Onion, Tomato, Coriander green and blend Ginger and Garlic.
After 15 minutes, take the meatballs out from the oven and keep it aside.
To make our Curry, on a medium heat, heat a pan with 1.5tbsps of Oil. Add in Cumin seeds. Let it caramelize. Add Bay leaves, Star anise and Cinnamon sticks. Give a little stir for a few seconds.
Now, the chopped Onion. Let it cook until it caramelizes and is soft. It should take about 5 to 6 minutes.
Next, Ginger and Garlic paste that we made earlier. Cook, stirring for 30 seconds.
Now, add in dry spices. Turmeric, Paprika, Coriander powder, Garam masala and Cumin Powder and stir it for about 20 seconds.
Next add in the Tomato sauce. Stir and cook it for 2 minutes to reduce the acidic taste.
Now, the chopped tomato and Salt to taste. Stir it. Cook it with the lid on until the tomato gets soft and the oil separates. Take the lid off. You will see, it's soft and the oil got separated.
Add in 1.5 cups of water. Combine it very well. Here If you like, add more water if you want more gravy. Now bring it to a boil. It's boiling now, stir it. And put in the roasted meatball.
Combine them very well. Now, lid on and cook it for about 15 minutes on low heat for the meatballs to absorb all this curry goodness. After 15 minutes, lid off. Stir it. It looks delicious and well cooked.
Finally, add the chopped coriander, mix it and we are good to dig in. I suggest it with steamed Basmati Rice, it’s amazing.
