Tomato ko Achar (Tomato Pickle) it’s a very common instant pickle we eat with almost our meals in Nepal. It’s a very savory and delicious pickle that enhances your appetite, mostly we eat with Dal Bhat Typical Nepali meal. This Pickle is very easy to make and takes very little time. I make it with Tomatoes, garlic, chilies, Onion, and a lot of fresh coriander as well as touch of Mustard Oil, it makes it so different, watch the video until the end.

Serves 4 to 6 it depends
Ingredients
4 medium sized Tomatoes
2 cloves Garlic
3 hot green Chilies or to your taste
1 tsp Salt or to your taste
Half red Onion finely chopped
2 to 3 tbsp spring Coriander finely chopped
Half Lemon/Lime juice (1 ½ tbsp or to your taste)
1 tbsp Mustard Oil
How to make:
Prepare all the ingredients above
Boil the Tomato and garlic for 6 to 7 minutes (depends the size of the tomato) until its very soft and set aside to cool it down.
Next, chopped finely Onion, coriander and randomly chop the chilies, set all aside.
Into a Mortar, put in the chopped chilies and the salt then grind it until it becomes like a paste.
Remove the tomato skin, add in and garlics too then mash them again until it becomes a fine sauce with the chili paste. Transfer to a large bowl then add in the chopped Onion and Coriander, Mustard Oil and Lemon Juice.
Combine them very well and serve.
Serve a little portion to your main meal and enjoy this savory pickle dish.
