Hello everyone, and welcome back to Pabs Kitchen! Today, I’m excited to share with you a delicious recipe for Tomato Radish cooked Pickle, known as Fatke in Nepali cuisine. This vibrant side dish features tender radish sticks submerged in a rich, flavorful tomato sauce, creating a perfect blend of tangy and spicy flavors that are sure to boost your appetite. It's a great accompaniment to any meal, and I'm sure you'll love it.
Ingredients:
1kg tomatoes
500g radish
1 large onion
100g fresh green or red chilies
10 cloves garlic
2.5 tsp salt (adjust to taste)
½ tsp turmeric powder
½ tsp fenugreek seeds
1 tsp coriander powder
1 tsp cumin powder
1/2 tsp red chili powder (adjust to taste)
2 tbsp mustard oil
Fresh coriander, chopped (for garnish)
Instructions:
Prepare the Ingredients:
Wash all vegetables thoroughly under cold water.
Chop tomatoes into small cubes, set aside.
Peel the radish, cut into 1-inch long sticks about 1 cm wide. Sprinkle 1 tsp salt over the radish, mix well, and set aside for 10-20 minutes to draw out excess water.
Remove the stems from the chilies, slit them lengthwise, and set aside.
Peel and slice the onion into half-centimeter thick slices.
Slice the garlic cloves thinly.
Cook the Pickle:
Heat 2 tbsp mustard oil in a large pan over medium heat.
Add fenugreek seeds and fry until they turn dark brown.
Add sliced garlic and sauté until it turns slightly golden.
Add the chopped chilies and stir for about a minute until aromatic.
Add the onion slices and a pinch of salt. Sauté for 3-4 minutes until the onions soften.
Add the spices: turmeric, coriander powder, cumin powder, and red chili powder. Stir well and cook for about 30 seconds until fragrant.
Add chopped tomatoes and a little salt. Mix well, cover, and cook for 5-6 minutes on medium-high heat, until the tomatoes are soft and juicy.
Combine with Radish:
Squeeze out the water from the salted radish sticks and add them to the pan with the tomato mixture. Stir well to combine.
Reduce the heat to medium, cover, and cook for 6-8 minutes, allowing the radish to absorb the tomato sauce.
Adjust Consistency and Serve:
After 8 minutes, check the consistency of the pickle. Add a cup of water if needed, stir well, and adjust salt to taste. Cook until it reaches your desired consistency.
Garnish with freshly chopped coriander, mix, and remove from heat.
Serving Suggestions:
Serve as a side dish with your main meal or as a spicy accompaniment to snacks.
Store leftovers in an airtight container in the refrigerator for up to a week.
